Butterscotch Shortbread

Ingredients:
1/2 cup butter or margarine — softened
1/2 cup shortening
1/2 cup packed brown sugar
1/4 cup granulated sugar
2 1/4 cups all-purpose flour
1 teaspoon salt
Heat oven to 300º. Beat butter, shortening and sugars in large bowl with electric mixer on medium speed, or mix with spoon. Stir in flour and salt. (Dough will be dry and crumbly; use hands to mix completely.)  

 

Roll dough into rectangle, 15 × 7 1/2 inches, on lightly floured surface.
Cut into 1 1/2-inch squares. Place about 1 inch apart on ungreased cookie sheet. Bake about 25 minutes or until set. (These cookies brown very little, and the shape does not change.) Remove from cookie sheet to wire rack.

Alaska Bake

Ingredients:
418 g Canned pink Alaska salmon
430 g Frozen broccoli
– cooked and drained
150 ml Dry white wine
2 tb Freshly chopped parsley
15 g Cornflour
175 g Gruyere or Edam cheese
– thinly sliced
Pre-heat the oven to 190C, 375F, Gas mark 5.

Drain the can of salmon and make the juice up to 150ml
/ 1/4 pint with water for fish stock. Break the salmon
into large chunks and arrange it with the broccoli in
a single or 4 individual ovenproof dishes. Put the
fish stock, wine, parsley and cornflower into a
saucepan and blend until smooth. Heat gently, stirring
all the time until the sauce thickens. Pour over the
salmon and broccoli.

Arrange the slices of cheese over the top of the dish
and bake for 20 minutes or until the cheese has
melted. Serve immediately.

Serves 4. Approx. 395 kcals per serving

Tex-Mex Mac n Cheese

Ingredients:
1 lb Ground beef
OR ground turkey
1 Bell pepper — chopped
1 Onion — chopped
1/2 c Mushroom — sliced
1 cn Tomato paste
1/2 c Water
1 cn Whole kernel corn –
Undrained
Salt, pepper, seasonings –
As desired
1 pk Macaroni and cheese
OR Velveeta and Shells

In large skillet, brown the ground beef or turkey with
the chopped pepper, onion and mushrooms. Stir in the
tomato paste and water and corn. Cook the macaroni and
cheese according to package directions, adding milk
and margarine if required. Add the macaroni and
cheese to the beef mixture. Mix
well and serve

Irish Stew

Ingredients:
1 pound lean mutton pieces
1 pound carrots
1 pound onions
1 pound potatoes
salt & pepper
1 pinch thyme
Place mutton with thyme in sauce pan and add cold water to cover. Bring
slowly to the boil and simmer for one hour. Add onions, potatoes,
carrots, and peeled and roughly copped. Season. Continue cooking until
vegetables are tender. Adjust seasoning. May be served alone or with
cooked green cabbage or sprouts
